one of the best things about our big group of friends is that there are so many great cooks in the bunch. and we're remarkably good at coordinating over-the-top fancy meals that feed everyone on a dime. brian meares and i were in charge of sunday night - we had a tough act to follow from saturday: an authentic taco bar with seasoned strip steak and cilantro shrimp.
brian cooked a pork shoulder all day, and then pulled it into bbq - his standard - and i was left with the side dishes. i tried a new pinterest recipe that i just have to share with yal; i've already had the leftovers for dinner last night, and lunch today. my pinterest recipe board is a work in progress, but there are some delicious bits i can't wait to try.
it's a super easy quinoa salad with artichokes, asparagus, kale and walnuts. find the recipe here. such a tasty way to get some major healthy foods in a delicious dish.
